Bacon Blue Cheese Mashed Potatoes

Bacon Blue Cheese Mashed Potatoes are like grown up mashed potatoes - creamy, with a tangy bite from the blue cheese, smoky salt from the bacon, and scallions to add a bit of freshness and crunch.
  • ¼ pound bacon
  • 4 Russet potatoes
  • ¼ cup half and half
  • 2 tablespoons butter
  • 2-3 ounces blue cheese, crumbled
  • 2 tablespoons scallions, chopped
  • salt and pepper to taste
  1. Add chopped bacon to a hot skillet and fry until crispy. Remove to plate with paper towels to drain bacon. Reserve.
  2. In the meantime, fill large pot or saucepan with cold water and add salt.
  3. Peel potatoes and chop into pieces that are roughly 1 inch square. Add to water.
  4. Turn heat to high and bring water to a boil. Reduce heat to simmer and cook potatoes for 10-12 minutes. They should be fork tender. Do not overcook as this will lead to gummy mashed potatoes.
  5. Drain potatoes and place back in same pot.
  6. Add butter and about half of the half and half. Mash by hand with with potato masher. Add more half and half as necessary to make creamy potatoes.
  7. Add blue cheese and scallions and combine well. Taste and add salt and pepper as necessary.
  8. Sprinkle bacon on top of potatoes to serve.
